The SUNRISE project, anchored in the interdisciplinary nexus of renewable energy, artificial intelligence (AI), and food technology, is poised to address critical challenges at the forefront of sustainable development and nutritional science. It endeavors to transcend the conventional paradigms of solar cooking, historically perceived as a niche or rudimentary cooking method, by leveraging advanced AI to optimize the efficiency and adaptability of solar ovens. This initiative targets the immediate necessity of reducing reliance on non-renewable energy sources and seeks to mitigate the nutritional degradation commonly associated with conventional cooking methods. The research spearheaded by the SUNRISE project is distinguished by its ambitious objectives, which are meticulously designed to push the boundaries beyond the current state of the art. Firstly, the project aims to revolutionize solar oven technology through the integration of AI, a novel approach that promises to significantly enhance the thermal performance of solar ovens. This innovation allows for the dynamic adjustment of cooking parameters in real-time, in response to environmental variables, thus optimizing energy use and ensuring consistent cooking quality. Secondly, SUNRISE is set to conduct a comprehensive investigation into the impacts of slow solar cooking on the nutritional, textural, and sensory attributes of food. This objective addresses a significant gap in the existing literature, where empirical data on the quality outcomes of solar cooking are scarce. By focusing on legumes—a staple food group with profound implications for global nutrition and food security—the project undertakes to elucidate the potential of solar cooking to preserve or even enhance the nutritional value of foods, aligning with global health and sustainability goals. The project’s ambition extends into the realm of predictive modeling, with the development of advanced models to forecast the thermal performance of solar ovens under a myriad of environmental conditions. This objective embodies a multidisciplinary fusion, bridging thermal physics, AI, and environmental science, to create tools that can accurately predict and optimize the functionality of solar ovens, thereby elevating the technology from experimental prototypes to practical, widely applicable solutions. Moreover, the SUNRISE initiative seeks to conduct a rigorous sustainability impact assessment, quantifying the environmental and economic benefits of the developed solar oven prototype. This analysis is pivotal, promising to offer robust evidence for the viability and advantages of solar cooking technologies, thus contributing to the discourse on renewable energy adoption and sustainable living practices. In conclusion, the SUNRISE project is characterized by its ambitious objectives, which not only aim to advance the technology and application of solar cooking but also strive to make a significant contribution to the intersecting fields of renewable energy, food science, and sustainability. Through its innovative approach and comprehensive research agenda, SUNRISE is set to address important challenges related to energy efficiency, food nutrition, and environmental sustainability, thereby positioning itself at the cutting edge of interdisciplinary research.
