CIDERWISE aims to mitigate food waste by repurposing discarded apples. The project promotes environmental stewardship, economic viability, and social responsibility, contributing to a more sustainable and resilient future. By leveraging innovative circular economy principles, CIDERWISE focuses on converting food waste into a valuable resource, fostering a more sustainable food system. One of the first objectives of the project is to adopt a multidisciplinary approach to cider production and assessment that considers sensory, emotional, and chemical profiles, elucidating cider quality and consumer perceptions of circularity value. Furthermore, the project endeavors to identify optimal yeast strains for cider production, tailoring them to apples at varying stages of deterioration. Through meticulous monitoring, deviations in sensory qualities are detected early, ensuring the production of high-quality cider while minimizing waste. Recognizing the significant amount of apple byproduct generated from cider production prompts the project to quantify this source of bioactive compounds through green technologies and explore potential applications. In alignment with its commitment to eco-friendly practices and resource efficiency, the project aims to valorize apple byproducts that would otherwise go to waste, transforming them into valuable resources. CIDERWISE also aims to optimize harvesting practices, empowering producers to tailor their approaches based on the desired product, fostering sustainability. Emphasizing supply chain management, CIDERWISE focuses on optimizing environmental, economic, and social dimensions. This involves the development of an integrated supply chain approach spanning orchards, cideries, and distribution networks aimed at minimizing waste and optimizing resource utilization throughout the production cycle.
