The integration of Brassica products into pasta formulations will also revolutionize food by enhancing its nutritional value. To achieve these aims, BLOOM addresses the following specific objectives: O1. Ensure Efficient Administrative and Financial Management of The Project: SO1.1. Ensure timely accomplishment of project objectives and deliverables by managing administrative tasks; SO1.2. Facilitate effective communication among project stakeholders and financing entities; SO1.3. Monitor and control project finances, including payment requests and investment plans. O2. Establish Plant Tissue Culture Protocols for Enhanced Glucosinolate Production in Brassica Plants: SO2.1. Collect data on promising Brassica species and prepare plant material for tissue culture initiation; SO2.2. Establish and maintain Brassica suspension culture cells for large-scale production; SO2.3. Elicit glucosinolate production in Brassica cell cultures through chemical elicitation protocols. O3. Develop Novel Approaches for Hydroponic Cultivation and Elicitation Experiments for Brassica Plants: SO3.1. Establish hydroponic infrastructure and transplant in vitro grown Brassica shoots; SO3.2. Optimize nutrient solution composition and assess glucosinolate levels in hydroponically grown Brassica plants; SO3.3. Implement elicitation protocols to enhance secondary metabolite production in hydroponically grown Brassica plants. O4. Investigate The Elicitation Effects for Glucosinolate Obtainment in Brassica Cultivation Systems: SO4.1. Conduct nutritional and chemical characterization of elicited and non-elicited Brassica specimens; SO4.2. Enhance recovery of glucosinolate-enriched extracts using eco-friendly methodologies; SO4.3. Evaluate bioactivities and anti-obesity effects of optimized Brassica extracts. O5. Innovatively Apply Brassica-Derived Products and Glucosinolate-Rich Extracts in The Development Of Pasta: SO5.1. Formulate pasta incorporating glucosinolate-enriched extracts and assess rheological and physicochemical parameters: SO5.2. Evaluate and validate the nutritional, chemical, and sensory properties of developed pasta products. SO5.3 Conduct sensory analysis to assess consumer preferences and acceptability of pasta products. O6. Disseminate, exploit, communicate, and outreach project results effectively: SO6.1. Disseminate project findings through publications, seminars, workshops, and webinars; SO6.2. Communicate project updates and insights through social media platforms and team meetings; SO6.3. Outreach to external stakeholders and communities through open house events, educational workshops, and interactive exhibits. BLOOM aims to surpass current standards by blending traditional and biotechnological methods in Brassica cultivation. The incorporation of Brassica-derived products into pasta showcases novel food science applications. Led by Maria Inês Dias, an expert in plant cultivation, and with Célia Cabral's expertise in natural extracts, the interdisciplinary teams drive ambitious advancements in Brassica utilization.
